I've eaten my body weight in Gluten Free Pancakes over this past weekend. I know, it's definitely not the healthiest thing for my diet, but after a weekend of hitting the road to hand out fresh samples of our Gluten Free Buttermilk Pancakes I had a half gallon of pancake mix left over. This got me playing around with the rest of the batter. I made pancake covered turkey bacon, pancake covered sausage, pancakes with the rolling stones logo, I could go on and on. Everything surprised me in how well our mix worked. However, there was one dish I tried that stood out overtop everything else. Gluten free funnel cakes! Let me tell you the taste and crunch that I got from frying these funnel cakes took me right to the carnival. I was only missing a corn dog. Shoot, I'm pretty sure I could have made some with the batter if I had hotdogs laying around.
Prep for making these gluten free funnel cakes was super easy. I grabbed my large cast iron skillet and got a pint of peanut oil up to medium/ medium low heat. (You can use vegetable oil, canola oil, or your favorite frying oil) I then poured our gluten free pancake batter into a ketchup bottle. Once the oil was up to temperature I squeezed a consistent thick squiggle of batter into the oil. Once the bottom turned a light brown I flipped the funnel cake with a slotted metal spoon. A few more moments in the oil, the funnel cake was golden brown and delicious and they were ready to be taken out. I figured placing them on a folded paper towel would soak up any extra oil. I let the funnel cake cool for a couple minutes and of course I dusted the top with powdered sugar.
I'm eating salads and running a few miles this week to make up for my diet this weekend but it was well worth my happy tummy.
