Let them eat pie! (or quiche) ;)

I bake a lot of meals that require pie crusts ( crab quiche, Asparagus/Ham quiche, pot pies, tomato pies and numerous dessert pies). Before the convenience of BooKoo's Gluten Free Pie Crust Mix, I would just grab regular pie shells and bake for others enjoyment but I'd eat only the contents of the pie and not the shell. But not anymore. :) I love that the package is enough for two pies for either a top shell or allows me to make a meal pie and a dessert pie at the same time. You can also simply bake an extra meal pie, cool and freeze, for a quick heat up future dinner.
My tip for rolling out a perfect pie shell (and even their pizza dough), is to spray two sheets of plastic wrap with oil of choice (I use coconut oil or avocado oil), place dough ball between sheets and roll out to desired thickness, then flip into your pie plate. Perfect every time. No mess and no struggles getting an even thickness pie shell. For pie and pizza lovers like me, I highly recommend BooKoo's Pie and Pizza Crust Mixes.

Rice Flour, Tapioca Starch, Sugar, Gaur Gum, Xanthan Gum, Locust Bean Gum, Sea Salt.

This mix is free from wheat, dairy, eggs, soy, peanuts and tree nuts.

Recipe For Gluten Free Pie Crust

**Makes 2 pie crust**
- Preheat oven to 400°.
- In a mixing bowl, add 1 cup shortening and 4 oz. water.
- Mix ingredients together with spoon or fingers.
- Split dough in half and place in 2-8 inch pie pans.
- Press dough into the bottom and sides of pie pans using back of spoon or fingers.
- Using a fork prick the bottom of the dough to prevent buckling.
- Place crust in oven and bake for 10 to 12 minutes.
